Baked Oatmeal with Berries

Baked oatmeal has been one of my favorite breakfasts ever since I was a little kid. It’s warm, comforting and filling! If you’ve never tried it, this is a great recipe to start with.

Once you’ve made it a few times and get the idea, you can start to experiment with baking fruits inside of it and not just adding them on top! (Like cups of fresh blueberries!!) I left my oatmeal “fruitless” when I baked it, because I really enjoy cutting mine down into single servings, wrapping them in plastic wrap, and then freezing them. It’s such a great way to have breakfasts for the family for an entire week!

Ingredients:

  • 6 cups oatmeal

  • 1 stick of butter (melted)

  • 4 eggs

  • 1/2 c. sugar

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 tbsp cinnamon

  • 2 tsp vanilla

  • 2 c. milk (I used Almond)

Directions:

Preheat the oven to 350F. Then butter or spray the inside of a 9x13 pan. Set aside.

In a large mixing bowl, combine oatmeal, sugar, baking powder, salt and cinnamon. Stir to combine.

In a separate bowl, combine eggs, milk, vanilla and melted butter. Mix well. Then, pour the entire liquid bowl over the oats/dry bowl and stir to combine. When ready, dump the entire mixture into the greased pan and pat down gently.

Bake for 40-45 minutes until it’s fully set.

Remove from the oven, slice into squares (I did 12) and serve while warm! Top it off with your favorite fresh fruits, a drizzle of honey or maple syrup, and a splash of milk. So delicious!!

Like I mentioned above, if you’d like to freeze single servings for the rest of your week(s), it’s really easy! This was a life saver for me when both my girls were really little, I was barely sleeping, and felt like they were nursing around the clock. The oatmeal would give me energy, keep me full, and now I can serve it to both my girls! Just take out your frozen single servings, place them in bowls and microwave until warm. It doesn’t take long! So start small until you know how long it takes in your microwave. :) Enjoy!!
